Immune Boost Soup
To strengthen the immune system, it is good to warm the inside and gently guide it to the outside. In this recipe, da suan (garlic) and sheng jiang (fresh ginger) take on the warming task. Cong bai (spring onions) direct energy outward and ward off pathogenic factors. In terms of harmonizing qi and wei, we also want to tonify the spleen internally. We do this with rice and huang qi.

INGREDIENTS
- 1 cong bai – oignon vert de printemps
- 1 morceau de sheng jiang – gingembre
- 2 da suan – gousses d’ail
- 15 g huang qi – racine d’astragale*
- 30 g jing mi – riz
- 1 cs d’huile d’olive
- 1 cs bouillon de légumes en poudre ou 1 bouillon-cube

INSTRUCTIONS
Finely chop the ginger, garlic, and astragalus root and sauté briefly in a pan. Add 1 liter of water, bouillon, and rice and simmer for 20 minutes. Remove the pan from the heat and stir in the finely chopped spring onions.
